Ingredients

  • 1 French baguette or Italian bread

  • 1 tablespoon balsamic vinegar

Instructions

  1. Prepare the tomato mixture: In a medium bowl, combine the diced tomatoes, minced garlic, basil, olive oil, balsamic vinegar, salt, and pepper. Gently toss to combine. Let the mixture sit at room temperature for at least 15 minutes to allow flavors to meld.
  2. Prepare the bread: Cut the baguette into 1/2-inch thick slices on a diagonal. You should get about 12-15 slices.
  3. Toast the bread: Preheat your grill, grill pan, or broiler to medium-high heat. Brush both sides of each bread slice lightly with olive oil. Grill or broil for 1-2 minutes per side until golden brown with nice grill marks.
  4. Add garlic flavor: While the bread is still warm, rub one side of each slice with the cut side of a halved garlic clove. The rough surface of the toasted bread will act like a grater.
  5. Top and serve: Using a slotted spoon, pile the tomato mixture onto the garlic-rubbed side of each toast. Top with shaved Parmesan if using. Serve immediately while the bread is still crispy.
